Orange Candy

  1. Put 1 cup of sugar into a heavy frying pan and stir with a wooden spoon over medium heat until the sugar is melted and caramelized to a golden brown color.
  2. Add the water and stir until the sugar completely redissolves.
  3. Add the remaining 2 cups sugar, evaporated milk, and salt.
  4. Place over low heat and stir until the mixture begins to boil.
  5. Cook, stirring frequently, until it reaches the soft ball stage (236u0b0).
  6. Remove from heat; cool to lukewarm, without stirring.
  7. Add the orange peel and nuts.
  8. Beat until the candy loses its gloss and will holds its shape when dropped from a spoon.
  9. Pour into a lightly buttered 8-inch square pan and cool until set.
  10. Cut into squares before candy becomes too firm.
