Creamy Red Bean Salsa
- 1 (19 ounce) can red beans
- 1 red pepper, coarsely chopped
- 1 small red onion, coarsely chopped
- 2 tablespoons parsley, chopped
- 2 tablespoons coriander, chopped
- 1 tablespoon jalapeno pepper, coarsely chopped
- 14 cup olive oil
- 14 cup red wine vinegar
- 2 tablespoons mayonnaise
- Puree all the ingredients in a food processor or blender and pour into a serving bowl.
- Chill for at least 30 minutes.
