Citrus, Tomato & Asparagus Salad
- 3/4 lb. fresh asparagus spears (4 to 5 inch)
- 1/3 cup KRAFT Zesty Italian Dressing
- 2 green onions, finely chopped
- 1 tsp. zest and 2 Tbsp. juice from 1 lemon Safeway 4 ct For $5.00 thru 02/09
- 2 large tomatoes, thinly sliced
- 1/4 cup KRAFT 2% Milk Shredded Mozzarella Cheese
- Tie kitchen string around asparagus.
- Stand, stem ends down, in saucepan of boiling water, with water just coming to bottoms of tips; simmer on medium-low heat 3 to 4 min.
- or until asparagus is crisp-tender.
- Drain; rinse with cold water until cooled.
- Mix dressing, onions, lemon zest and juice until blended.
- Arrange tomatoes on platter; top with asparagus.
- Drizzle with dressing mixture; sprinkle with cheese.
