Pistachio Moments

  1. Heat oven to 325F.
  2. Beat butter in bowl at medium speed, scraping bowl often, until creamy.
  3. Add flour, powdered sugar and cornstarch; beat at low speed until well mixed.
  4. (Dough will be crumbly.)
  5. Stir in 1/2 cup pistachios.
  6. Shape dough into 1-inch balls, flouring hands, if necessary.
  7. Place 2 inches apart onto ungreased cookie sheets.
  8. Bake 14-17 minutes or until set and lightly browned around edges.
  9. Remove to cooling rack.
  10. Cool completely.
  11. Microwave 1/2 cup baking chips in small bowl on Medium (50% power) 1-2 minutes or until softened.
  12. Stir until smooth.
  13. Place melted chips in small resealable plastic food bag.
  14. Snip off very small corner of bag.
  15. Drizzle glaze onto cooled cookies.
  16. Top with chopped pistachios, if desired.
  17. Variation: Omit white baking chips.
  18. Follow directions for mixing and baking cookies as above.
  19. Immediately roll cookies in powdered sugar.
  20. When cool, roll cookies again in powdered sugar.
