Snowball Cookies

  1. Preheat oven to 350F.
  2. Beat butter, granulated sugar and vanilla in large bowl with electric mixer on medium speed until creamy.
  3. Add flour, pecans and salt; mix well.
  4. Cover.
  5. Refrigerate 1 hour or until chilled.
  6. Shape dough into 1-inch balls.
  7. Place, 2 inches apart, on ungreased baking sheets.
  8. Bake 10 to 12 min.
  9. or until centers are set.
  10. Remove from baking sheets to wire racks; cool completely.
  11. Roll in powdered sugar until evenly coated.
  12. Store in tightly covered container at room temperature.
