Snowball Cookies
- 1 cup (2 sticks) butter, softened
- 1 cup granulated sugar
- 1 tsp. vanilla
- 2 cups flour
- 1-1/2 cups PLANTERS Pecan Pieces, finely ground
- 1/4 tsp. salt
- 1/2 cup powdered sugar
- Preheat oven to 350F.
- Beat butter, granulated sugar and vanilla in large bowl with electric mixer on medium speed until creamy.
- Add flour, pecans and salt; mix well.
- Cover.
- Refrigerate 1 hour or until chilled.
- Shape dough into 1-inch balls.
- Place, 2 inches apart, on ungreased baking sheets.
- Bake 10 to 12 min.
- or until centers are set.
- Remove from baking sheets to wire racks; cool completely.
- Roll in powdered sugar until evenly coated.
- Store in tightly covered container at room temperature.
