Mashed Parsnips

  1. Peel the parsnips and cut length ways then in half.
  2. Bring to the boil in a pot of salted water.
  3. Boil for around 15 minutes or until done.
  4. Drain well.
  5. Mash the parsnips and add back into the pot.
  6. Add a knob of butter, a pinch of salt and the black pepper.
  7. Stir well.
  8. Stir the mash over a low heat.
  9. Check seasoning is to your liking.
  10. Serve immediately.
