Orka Chowder
- 1 md. onion, coarsely chopped
- 1 md. green pepper, coarsely chopped
- 6 stalks celery, chopped
- 1 tsp. olive oil
- 6 cups chicken broth
- 1 cup tomato puree
- 4 bay leaves
- 1/8 tsp. marjoram
- 1/8 tsp. thyme
- 1/2 tsp. basil
- 4 juniper berries, crushed
- 3 cups sliced okra
- 1 clove garlic, crushed
- 2 tbsp. sugar
- 1 to 2 dash Tabasco sauce
- 2 to 3 tbsp. burgundy
- 1 cup heavy cream
- Salt, to taste
- 1 tbsp. butter
- Saute onion, green pepper and celery butter olive oil until onion is transparent.
- Add chicken broth, tomato puree, bay leaves, marjoram, thyme, basil and juniper berries.
- Simmer cover about 30 minutes.
- Add sliced okra, garlic, sugar and Tabasco sauce.
- Simmer 15 minutes.
- Add wine, heavy cream and salt to taste.
- Remove bay leaves before serving.
