Frosty Lime Tartlets

  1. Bake pastry shells according to package directions; let cool completely on wire racks.
  2. For filling:.
  3. In medium saucepan, combine sugar and cornstarch.
  4. Stir in whipping cream, lime peel, and lime juice.
  5. Bring to boiling over medium-high heat, stirring constantly; reduce heat.
  6. Simmer, uncovered, about 1 minute or until thickened and smooth, stirring constantly.
  7. Remove from heat.
  8. Stir in sour cream, butter, and enough food colouring to make the mixture pale green.
  9. Cool to room temperature.
  10. Spoon into shells.
  11. Cover and chill at least 2 hours or up to 24 hours.
  12. To serve, spoon whipped cream onto center of each tartlet, and top with a curl of lime peel.
