My Kentucky Derby Chocolate Pie
- 3 whole eggs large, or 2 jumbo eggs
- 18 cup corn oil or vegetable oil, something neutral tasting
- 3/4 cup flour, all-purpose
- 3/4 cup sugar granulated white
- 3/4 cup brown sugar, light packed
- 2 1/4 stick butter or baking margarine, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups pecans or walnuts, chopped
- 1 1/2 cups chocolate chips (semi-sweet)
- 1 each pie shell (9 inch) unbaked
- 1 pint heavy whipping cream whipped and sweetened, or vanilla ice cream (optional)
- 16 ounces chocolate syrup Hershey's or other, warmed (optional)
- Preheat oven to 325F (160C) degrees.
- In a large bowl, beat the eggs on high speed until foamy, about 3 minutes.
- Beat in vanilla and oil just until incorporated.
- Beat in flour and both sugars until well blended.
- Beat in softened butter.
- Stir in nuts and chocolate chips.
- Pour into the unbaked pie shell and smooth top.
- Bake on middle rack of oven for 1 hour to 1 hour 10 min.
- or until knife inserted halfway between edge and center comes out clean and top is golden brown (watch browning of crust---may need to cover edges with foil if browning too quickly).
- Cool on wire rack.
- Serve warm or at room temperature with warm chocolate syrup and whipped cream or vanilla ice cream, if desired.
