Hawg Heaven Chili
- 1 12 lbs fresh pork
- 1 lb ground beef
- 2 (15 ounce) cans stewed tomatoes
- 2 (15 ounce) cansmild chili beans (undrained)
- 1 (15 ounce) can tomato sauce
- 2 cups coarsely chopped sweet peppers
- 1 cup chopped onion
- 1 cup chopped celery
- 3 fresh garlic cloves (chopped)
- 14 cup fresh jalapeno pepper (chopped fine)
- 2 tablespoons ground cumin
- 2 tablespoons chili powder
- 12 tsb salt
- 14 teaspoon pepper
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
- Cut Pork into 2 inch cubes.
- Put into a slow cooker with 2 cups of water and slow cook until tender.
- Drain meat to save juice for future use.
- After cooling meat, pull meat part into a separate bowl and set aside.
- In a large pot add oil and all peppers , onions, celery, garlic.
- Cook until tender.
- Set a side.
- In a separate pan.
- Brown ground beef and drain.
- Add Cumin, Chili power to ground beef.
- Add Pork and Ground beef to Veg.
- in the large pot.
- Add Tomatoes, Beans, Tomato sauce, Salt, Pepper and Sugar to the large pot.
- Simmer for at least 1 hour.
- The longer the better.
- Optional toppings- shredded cheese and/or chopped oinions.
- This recipe is best if made a day prior to serving and does freeze well.
