Pennsylvania Potato Casserole
- 1 cup mashed potatoes
- 2 lg. eggs, beaten
- 1 cup milk
- 4 slices bread
- 1 sm. onion, diced
- 2 tbsp. butter
- Salt, to taste
- Pepper, to taste
- Thoroughly mix potatoes and eggs with a fork.
- Add milk and set aside.
- Cut bread into 1/2-inch cubes and brown with onion in the butter.
- Stir onions and bread into potato mixture and add seasonings.
- Turn into a greased casserole and bake in preheated 375F oven for 1 hour.
