Banana Wheat Bagel Dough
- 1 egg, room temperature
- 1 cup water (enough to equal 80F/27C)
- 2 tablespoons oil
- 1 tablespoon honey
- 1 12 teaspoons salt
- 12 cup mashed banana
- 2 12 cups whole wheat flour
- 1 cup bread flour
- 2 14 teaspoons Red Star active dry yeast or 1 12 teaspoons red star fast rising yeast or 1 12 teaspoons bread machine yeast
- 1 egg white, beaten
- 1 tablespoon water
- poppy seeds or sesame seeds
- Place bagel dough ingredients into bread machine container as directed in bread machine manual.
- Set bread machine to dough cycle and run machine.
- Place on a lightly floured surface.
- Divide into pieces.
- Roll each in a small ball, making a hole in the center of each with thumbs.
- Gently pull to make a one-inch hole.
- Place on a greased baking sheet.
- Cover and let rise in a warm place for 30 minutes or until double in size.
- In a 3-quart saucepan, bring to a boil 2 quarts water and 2 tablespoons sugar.
- Place a few bagels at a time in boiling water.
- Simmer 3 minutes turning once.
- Remove with slotted spoon and put back on greased baking sheet.
- Brush with egg and sprinkle with choice of toppings.
- Bake at 400 F/205 C for 20-25 minutes or until done; cool on a wire rack.
