Spiced Pear Infusion
- 4 pears, roasted
- 3 cinnamon sticks
- 2 vanilla beans, split lengthwise
- 1/2 cup raisins
- 1 tbsp whole cloves
- 2 whole anise stars
- 1 liter bottle of rum (10 Cane rum is recommended)
- To roast pears, core and halve them and wrap them in aluminum foil.
- Roast in a preheated 350F oven for about 25 minutes, or until the pears start to sweat and soften.
- When cool enough to handle, cut into slices.
- In a clean, dry jar, combine the sliced roasted pears and all other ingredients.
- Let sit for at least 48 hours.
- If a stronger pear flavor is desired, let sit for another 48 hours.
- Strain liquor and bottle.
- *This can be used in rum drinks, both cold and hot, or served with juice or ginger ale.
