Corn on the Cob Con Queso

  1. Heat oven to 375 degrees F.
  2. Combine the butter, cumin, paprika, cayenne pepper, cilantro, salt and pepper, to taste.
  3. Rub corn with the butter mixture.
  4. Wrap in foil and put in the oven.
  5. Cook for 20 to 25 minutes.
  6. Unwrap from foil, top with queso fresco and a squeeze of lime.
  7. Serve immediately.
