Honey-Herb Chicken & Spinach Salad
- 2 qt. MIRACLE WHIP Dressing
- 2 cups honey
- 1 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2-1/2 Tbsp. Dried basil or tarragon leaves, crushed
- 48 each boneless skinless chicken breasts (6 oz.)
- 4 gal. Fresh spinach leaves, torn
- 2 qt. Fresh mushrooms, sliced
- Mix salad dressing, honey, lemon juice and basil.
- Reserve 1 quart of the salad dressing mixture (or 1/2 cup for trial recipe).
- Place chicken on rack of broiler pan.
- Brush with 1/2 of the remaining salad dressing mixture, using about 1 Tbsp.
- salad dressing mixture for each chicken breast.
- Broil 10 minutes; turn over.
- Brush each breast with additional 1 Tbsp.

- Broil an additional 7 to 10 minutes or until chicken is cooked through.
- Cut chicken into 1/2-inch-thick slices.
- For each serving: Toss 1-1/4 cups spinach with 2 Tbsp.
- mushrooms; place on serving plate.
- Top with 1 cooked chicken breast, sliced.
- Drizzle with about 2 Tbsp.
- of the reserved salad dressing mixture.
- Serve immediately.
