Honey-Herb Chicken & Spinach Salad

  1. Mix salad dressing, honey, lemon juice and basil.
  2. Reserve 1 quart of the salad dressing mixture (or 1/2 cup for trial recipe).
  3. Place chicken on rack of broiler pan.
  4. Brush with 1/2 of the remaining salad dressing mixture, using about 1 Tbsp.
  5. salad dressing mixture for each chicken breast.
  6. Broil 10 minutes; turn over.
  7. Brush each breast with additional 1 Tbsp.
  8. salad dressing mixture.
  9. Broil an additional 7 to 10 minutes or until chicken is cooked through.
  10. Cut chicken into 1/2-inch-thick slices.
  11. For each serving: Toss 1-1/4 cups spinach with 2 Tbsp.
  12. mushrooms; place on serving plate.
  13. Top with 1 cooked chicken breast, sliced.
  14. Drizzle with about 2 Tbsp.
  15. of the reserved salad dressing mixture.
  16. Serve immediately.
