Cajun Red Beans Recipe
- 1 lb red kidney beans soaked and liquid removed
- 2 lb ham or possibly turkey ham -- cubed
- 2 lrg onions -- minced
- 3 clv garlic -- chopped
- 1 tsp black pepper coarsely grnd
- 3 quart water
- 1 1/2 Tbsp. cajun seasoning
- 1 tsp Tabasco sauce
- 1 lb smoked sausage (andouille, pref.) - sliced
- In a large kettle bring all ingredients to a boil, except sausage.
- Simmer till beans are soft and gravy thickens-3-4 hrs.
- Stir occasionally.
- Stir in sausage 2 hrs before serving.
- (Total cook time about 6 hrs) Serve over warm rice.
- *To help thicken sauce, mash about 1 c. soft beans and return to gravy.
- Also beans can be soaked and softened using the microwave instead of overnight.
- *2 tsp.
- of Tabasco will be VERY warm & spicy.
