Cajun Red Beans Recipe

  1. In a large kettle bring all ingredients to a boil, except sausage.
  2. Simmer till beans are soft and gravy thickens-3-4 hrs.
  3. Stir occasionally.
  4. Stir in sausage 2 hrs before serving.
  5. (Total cook time about 6 hrs) Serve over warm rice.
  6. *To help thicken sauce, mash about 1 c. soft beans and return to gravy.
  7. Also beans can be soaked and softened using the microwave instead of overnight.
  8. *2 tsp.
  9. of Tabasco will be VERY warm & spicy.
