Fruit Pizza
- 1 roll (20 oz.) refrigerated slice and bake sugar cookie dough
- 1/8 tsp. cinnamon
- 1 pkg. (8 oz.) cream cheese
- 1/4 c. skim milk
- 2 Tbsp. white sugar
- 1/2 tsp. vanilla extract
- 3 or 4 varieties of fruits in season
- 1/2 c. apricot preserves
- 2 Tbsp. water
- 1/2 tsp. strawberry extract
- Cut cookie dough into 1/8 inch slices.
- Arrange cookie slices, slightly overlapping on aluminum foil covered 14 inch pizza pan, press edges to seal.
- Sprinkle with cinnamon.
- Bake at 375u0b0 for 12 to 15 minutes or until golden brown.
- Cool, remove from foil onto serving plate.
- Combine cream cheese, milk, sugar and vanilla until well blended.
- Spread over crust.
- Arrange fruit on cream cheese mixture.
- Glaze with combination of apricot preserves, water and strawberry extract.
- Cut into wedges.
