Summer Salad with Grilled Sausage
- 1/4 cup olive oil
- 1 Tbsp. GREY POUPON Country Dijon Mustard
- 1 Tbsp. red wine vinegar
- dash black pepper
- 2 frozen BOCA Meatless Bratwurst
- 3 cups torn mixed salad greens
- 1/4 cup thinly sliced red onions
- 1/4 of a medium cucumber, sliced
- 8 cherry tomatoes, halved
- Beat oil, mustard, vinegar and pepper with wire whisk until well blended; cover.
- Grill bratwurst as directed on package.
- Toss greens, onions, cucumbers and tomatoes with 1/4 cup of the dressing in large bowl.
- Cover and refrigerate remaining dressing for another use.
- Divide salad mixture between two plates.
- Top each salad with 1 sliced bratwurst.
