Sugar-Free Diabetic Bars
- 1 1/4 c. water
- 2 c. raisins
- 1/3 c. oil
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 Tbsp. warm water
- 1 tsp. soda
- 1/2 tsp. salt
- 3/4 tsp. liquid sweetener
- 1 tsp. baking powder
- 1 egg
- 2 c. flour
- about 1 1/2 c. applesauce
- 1 c. chopped nuts
- Boil water, raisins, cinnamon, nutmeg and oil 3 minutes.
- Set aside to cool.
- Mix warm water, soda, sweetener, salt and baking powder.
- Set aside.
- Beat 1 egg well.
- Add second mixture.
- Mix well.
- Add applesauce and first mixture; beat well.
- Blend in flour.
- If needed, use more applesauce to make batter.
- Add nuts. Bake at 350u0b0 about 30 minutes in a 10 x 15-inch pan.
- When cool, cut into bars.
