Pumpkin Applesauce Bread
- 2/3 c. solid vegetable shortening
- 2 1/2 c. granulated sugar
- 4 large eggs
- 1 (16 oz.) can applesauce
- 1 c. solid pack pumpkin
- 3 1/3 c. flour, sifted before measuring
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. ground mace
- 1/2 tsp. ground nutmeg
- 1 (6 oz.) can apple juice
- Heat oven to 350u0b0.
- Thoroughly grease two 9 x 5 x 3-inch loaf pans.
- In a large bowl, beat shortening and sugar with an electric mixer on high until creamy.
- Add eggs, one at a time, beating well after each.
- Fold in applesauce and pumpkin.
- Mix flour, baking soda, salt, baking powder and spices.
- Stir into pumpkin mixture in thirds, alternating with apple juice.
- Divide batter evenly between the two pans.
- Bake about 1 hour, until tester inserted in the centers comes out clean.
