Tomato Gravy
- 1 can whole tomatoes
- 1 can tomato paste
- 1 can tomato sauce
- 2 large onions, minced
- 1 large bell pepper, minced
- 3 ribs celery, minced
- 5 toes garlic, minced
- 1/4 fresh parsley, minced
- 2 tsp. thyme
- 2 tsp. basil
- 2 bay leaves
- 1 large serving spoonful flour
- 3/4 c. oil
- salt and pepper to taste
- Save tomato cans and fill with water.
- In a Dutch oven, place oil and heat.
- Put vegetables in and saute until clear.
- Add flour to pot and fry until brown.
- In a blender or food processor, put in tomato products.
- When blended, put in pot and cook for about 15 minutes.
- Put water from cans in pot, plus add about 1 cup more (until right consistency, not too thick or thin).
- Salt and pepper to taste.
- Let cook for 1 hour.
