Avocado And Spinach Soup Recipe

• 1 pkt frzn spinach (thawed) (250 g )
• 2 x avocados - pulp only
• 1 x lemon - juice only
• 1 clv garlic - crushed
• 700 ml chicken stock
• 1 tsp cumin light lowfat sour cream - for garnish

1. Place all ingredients except lowfat sour cream in the food processor, process till smooth.
2. Place in a large bowl, cover and chill.
3. Serve in 4 bowls with a swirl of lowfat sour cream to garnish.
