Braised Dried Scallops And Radishes Recipe
- 10 x Dry scallops
- 1 1/2 c. Soaking liquid
- 1 c. Stock
- 2 Tbsp. Sherry
- 1/2 tsp Salt
- 30 x Radishes
- 2 x -(up to)
- 3 Tbsp. Oil
- 1 tsp Cornstarch
- 1 Tbsp. Water
- 1.
- Soak dry scallops.
- (Reserve soaking liquid.)
- 2.
- Strain soaking liquid; then combine with stock, sherry and salt.
- Trim and peel radishes.
- 3.
- Heat oil.
- Add in scallops and radishes; stir-fry 2 min.
- 4.
- Add in soaking liquid-stock mix and heat quickly.
- Then simmer, covered, till scallops are tender (about 15 min).
- 5.
- Meanwhile blend cornstarch and remaining cool water to a paste.
- Then stir in to thicken, and serve.
