Cajun Meatloaf With Sweet Sauce

  1. Meatloaf: Heat oil in large skillet over medium-high heat.
  2. Add red pepper, green pepper, onion and salt; cover and cook on low heat until very tender, about 8.5 minutes.
  3. Remove from heat and cool slightly.
  4. Heat oven to 350 degrees F. Grease a 9 x 5 x 3-inch loaf pan.
  5. Mix bread, and milk in a large bowl; let stand a few minutes to soften.
  6. Add beef, pork, bread crumbs, 1/2 cup Chile Sauce , egg, hot pepper sauce and sweet red pepper mixture; toss easy to coat.
  7. Spoon and dab into prepared loaf pan.
  8. Bake for about 1 hour,check to be sure loaf is done.
  9. Let stand 10 minutes before serving.
  10. Top each serving with a Tlbs of Sweet Pepper Sauce and serve.
