Colcannon Mash With Blue Cheese

  1. Place the potatoes and scallions in a pan with the milk.
  2. Bring to the boil, cover and simmer until cooked.
  3. Mash the potatoes with the scallions and season.
  4. Spoon into to an ovenproof dish and top with blue cheese.
  5. Place under the broiler to brown.
  6. Once browned remove from the broiler and serve.
