Okra and Sweet Potato Fritters

  1. Combine okra, sweet potato, shallot, honey, soy sauce, egg, and cornmeal in large bowl.
  2. Refrigerate 30 minutes.
  3. With wet hands, form mixture into 16 golf ballsize spheres, and flatten slightly.
  4. Heat 1 Tbs.
  5. oil in large skillet over medium-high heat.
  6. Cook fritters 8 minutes, flipping once.
  7. Repeat with remaining oil and spheres.
  8. Serve fritters warm, with soy sauce for dipping, if desired.
