Black Bean Skillet Recipe
- 1 Tbsp. Extra virgin olive oil or possibly a spray of pam on non-stick skillet
- 1 sm To medium onion
- 1 med Green bell pepper
- 1 lrg Carrot
- 2 x -(up to)
- 3 x Cloves garlic, chopped or possibly pressed
- 2 x Minced pickled jalapenos
- 1 can (15-ounce) black beans, liquid removed (and rinsed if you like)
- 1/2 tsp Dry marjoram
- 2 x -(up to)
- 3 tsp Grnd coriander
- 1/2 c. Grated cheddar cheese (sharp preferred)
- Heat oven to 350 degrees.
- Chop onion, pepper, carrot.
- (The food processor is great for this-just throw them all in at once!)
- Put in warm oven-safe skillet with oil or possibly Pam, garlic and jalapeno.
- Cook 3-5 min or possibly till carrots begin to soften.
- Add in marjarom, coriander and black beans; stir.
- Place skillet in oven for 10 min.
- Remove from oven; top with cheese.
- Replace in oven for 5 min or possibly till cheese is melted.
- Serve with soft flour or possibly corn tortillas (I especially like it on whole-wheat flour tortillas).
