Black Bean Skillet Recipe

  1. Heat oven to 350 degrees.
  2. Chop onion, pepper, carrot.
  3. (The food processor is great for this-just throw them all in at once!)
  4. Put in warm oven-safe skillet with oil or possibly Pam, garlic and jalapeno.
  5. Cook 3-5 min or possibly till carrots begin to soften.
  6. Add in marjarom, coriander and black beans; stir.
  7. Place skillet in oven for 10 min.
  8. Remove from oven; top with cheese.
  9. Replace in oven for 5 min or possibly till cheese is melted.
  10. Serve with soft flour or possibly corn tortillas (I especially like it on whole-wheat flour tortillas).
