Pumpkin Apple Pie
- 1/2 c. brown sugar
- 1 Tbsp. cornstarch
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 c. water
- 2 Tbsp. butter
- 4 tart apples, sliced
- 1 (5 1/2 oz.) evaporated milk
- 1 Tbsp. lemon juice
- 1 (9-inch) pie shell (unbaked)
- 1 egg, beaten
- 1 c. pumpkin
- 1/2 c. white sugar
- 1/4 tsp. salt
- 1 tsp. pumpkin pie spice
- In medium saucepan, combine brown sugar, cornstarch, cinnamon, salt, water and butter.
- Cook and stir over medium heat until boiling.
- Add sliced apples and cover and cook 5 minutes.
- Remove from heat and add lemon juice.
- Spread mixture in bottom of unbaked pie shell.
- Combine egg, pumpkin, sugar, salt, spice and evaporated milk.
- Mix well and carefully pour over apple mixture. Bake at 375u0b0 for 40 to 45 minutes.
- Cool and serve with whipped cream.
