Hot Brown Sandwich
- 1/3 c. margarine
- 1 medium onion, chopped
- 1/3 c. flour
- 3 c. hot milk
- 1 tsp. salt
- 1/2 tsp. crushed red pepper (optional)
- 1/4 lb. process cheese, cut in chunks
- 2 eggs, well beaten
- 1 Tbsp. margarine (additional)
- 4 strips bacon
- sliced chicken or turkey
- Parmesan cheese
- paprika (if desired)
- Melt butter or margarine in heavy saucepan over medium heat. Add onion and cook until clear.
- Add flour and blend to make a smooth paste.
- Add milk, salt and red pepper.
- Stir and cook until thick and smooth.
- Stir in cheese, eggs and remaining tablespoon margarine.
- Continue to cook, stirring, until mixture almost reaches boiling point, but do not let it boil.
- Remove from heat. Fry bacon crisp (and crumble if desired).
- To assemble, toast eight slices of bread, cut four in half diagonally.
- On four oven-proof plates, arrange toast.
- Lay sliced chicken or turkey over toast. Cover with sauce, then add bacon.
- Sprinkle with Parmesan cheese and paprika (optional).
- Place under broiler until sauce begins to bubble.
- Serve at once.
- Makes 4 servings.
