Potato crusted fried chicken

  1. In a medium to large sauce pot, preheat oil to 350F
  2. Crack the eggs into a medium bowl, beat them slightly
  3. In a second medium bowl, combine potato flakes, salt, pepper, garlic, parsley, and paprika, mix slightly.
  4. Dip the chicken into the eggs, then the dry ingredients.
  5. Slowly lower the breaded chicken into the hot oil, cook until the chicken is a golden brown color and is floating in the oil, allow to dry on a paper towel and enjoy!
