Broc-A-Noodle-Stew
- 2 onions, sliced thickly
- 3 ribs of celery, sliced
- 2 carrots, sliced
- 1 Tbsp. oil
- 3 Tbsp. butter
- large broccoli stalk and florets, chopped
- 1/2 head cauliflower, broken into florets
- 14 oz. can whole tomatoes, chopped
- 1 medium zucchini
- 4 oz. egg noodles
- 1 tsp. chopped dried parsley
- 1 tsp. oregano
- 1 tsp. basil
- salt and pepper to taste
- 4 c. vegetable broth
- Melt butter and oil in large pot.
- Add onions, celery and carrots.
- Saute until soft.
- Add broccoli, cauliflower, tomatoes and juice and vegetable broth.
- Simmer until cauliflower is cooked.
- Add zucchini, cook until barely soft.
- Add noodles, cook 10 more minutes.
- Serve hot topped with Parmesan cheese or sour cream.
- Makes 6 servings.
