Broc-A-Noodle-Stew

  1. Melt butter and oil in large pot.
  2. Add onions, celery and carrots.
  3. Saute until soft.
  4. Add broccoli, cauliflower, tomatoes and juice and vegetable broth.
  5. Simmer until cauliflower is cooked.
  6. Add zucchini, cook until barely soft.
  7. Add noodles, cook 10 more minutes.
  8. Serve hot topped with Parmesan cheese or sour cream.
  9. Makes 6 servings.
