Favorite Rice Casserole
- 4 Tbsp. margarine
- 1 c. chopped onion
- 4 c. freshly cooked rice (not instant)
- 2 c. sour cream
- 1 c. cream-style cottage cheese
- 1 large bay leaf, crumbled
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 (4 oz.) cans chopped green chilies, drained
- 2 c. grated sharp Cheddar cheese
- chopped parsley
- Melt butter in large skillet.
- Saute onion until golden. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt and pepper; toss lightly to mix well.
- In a greased 8 x 12-inch baking dish, layer half the rice mixture, then half the chilies, then sprinkle with half the cheese.
- Repeat.
- Bake, uncovered, 25 minutes, or until bubbly and hot.
- Sprinkle with chopped parsley.
