Black Currant Jam Recipe

  1. Put some of the currants in a large kettle, Heat over low heat, crushing with a potato masher to make some juice.
  2. Add in remaining currants.
  3. Heat to boiling, simmer one minute.
  4. Stir in sugar and simmer, stirring often, for 5 min.
  5. Add in honey, simmer 4 min longer.
  6. Test for set.
  7. Then put in jars.
  8. Makes about 12 8 ounce.
  9. jars.
