St. Joseph'S Cream Puffs
- 1 c. water
- 1/2 c. margarine
- 1 c. flour
- 1/4 tsp. salt
- 4 eggs
- 1 tsp. grated orange rind
- 8 maraschino cherries (for garnish)
- 1 c. Ricotta cheese
- 2 Tbsp. semi-sweet chocolate morsels, chopped
- 1 tsp. grated orange rind
- 1/3 c. confectioners sugar
- 1/2 c. heavy cream, whipped
- 1 tsp. almond extract or vanilla
- For Puffs:
- Combine water and margarine in a deep saucepan. Bring to a boil; cook until margarine melts.
- Quickly stir in flour and salt. Beat until dough forms a ball in center of pan. Remove from heat; let stand 5 minutes. Add eggs, one at a time, beating thoroughly after each addition. Beat in orange rind. Mixture will be very stiff. Drop mixture by tablespoon onto a baking sheet, which has been greased.
- Bake at 375u0b0 for 20 minutes or until puffs are firm and crusty (prick each puff with a fork to release steam).
- Leave in oven an additional 5 minutes. Remove from oven; cool.
