Preacher'S Shrimp Pasta Bruscato
- 1 lb. spaghetti
- 2 Tbsp. olive oil
- 4 cloves garlic, pressed
- 3 Tbsp. ground Romano cheese
- 1 c. shredded Mozzarella cheese
- 1/2 bell pepper, finely chopped
- 1 large white onion, coarsely chopped
- 1 stick margarine (1/4 lb.)
- 2 lb. peeled shrimp (raw)
- 1/2 tsp. oregano
- 2 Tbsp. fennel seed
- salt and pepper to taste
- 1/2 pt. heavy cream
- 1 c. coarsely chopped black olives
- Sauce:
- Heat olive oil in pan and saute garlic, bell pepper and onion until wilted.
- Add fennel seed, oregano and margarine. Reduce heat and simmer 5 minutes.
- Add shrimp, 1/2 whole and 1/2 chopped, in order to distribute the flavor.
- Stir gently until shrimp turn pink (approximately 10 minutes).
- Add heavy cream, salt and pepper to taste and simmer 5 more minutes.
