Beef and Corn Casserole
- 2 tbsp. oil
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 lb. ground beef
- 1 can cream-style corn
- Salt, to taste
- 2 firm, ripe tomatoes, chopped
- 1 cup buttered breadcrumbs
- Heat oil in skillet.
- Add pepper, onion and cook until soft.
- Add ground beef and cook until browned.
- Stir in corn and salt.
- Mix well.
- Put in a baking dish, cover with tomatoes and sprinkle with buttered crumbs.
- Bake about 25 minutes at 350F or until crumbs are browned.
