Lemon Celebration Cake
- 250g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup ETA* Lemon Spread
- 1 pre-purchased double unfilled chocolate sponge cake
- 2 tablespoons finely chopped mint
- extra mint leaves to garnish
- Beat Philly* until smooth.
- Add lemon spread and continue to beat until combined and slightly fluffy.
- Place the base of the cake on the desired serving platter.
- Spread with 1/3 of the Philly* icing; sprinkle with mint and top with the other half of sponge.
- Spread remaining icing over the cake to cover the top and sides.
- Garnish with extra mint leaves.
