Lemon Celebration Cake

  1. Beat Philly* until smooth.
  2. Add lemon spread and continue to beat until combined and slightly fluffy.
  3. Place the base of the cake on the desired serving platter.
  4. Spread with 1/3 of the Philly* icing; sprinkle with mint and top with the other half of sponge.
  5. Spread remaining icing over the cake to cover the top and sides.
  6. Garnish with extra mint leaves.
