Chicken and Crunchy Noodle Salad Cups
- 500g skinless chicken breast fillets, grilled and shredded
- 100g packet fried noodles
- 3 spring onions, thinly sliced into 4cm lengths
- 1 large carrot, finely julienne
- 1/2 cup Vietnamese mint leaves, roughly chopped
- 1/2 cup coriander leaves, roughly chopped
- 1/3 cup KRAFT FREE* Thai Lime & Coriander Dressing
- 1 tablespoon fish sauce
- 8 large lettuce cups to serve
- Combine the chicken, noodles, spring onions, carrot, mint, coriander, dressing and fish sauce in a large bowl.
- Divide chicken mixture evenly between the lettuce cups.
- Serve immediately.
