Tropical Chunk Cookies
- 1 pkg. (12 oz.) BAKER'S White Chocolate Chunks, divided
- 1-3/4 cups flour
- 1-1/2 cups BAKER'S ANGEL FLAKE Coconut, toasted
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup (1 stick) butter or margarine, softened
- 1/3 cup firmly packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup chopped PLANTERS Macadamias
- Microwave 1 cup of the chocolate chunks in microwavable bowl on HIGH 2 minutes or until almost melted.
- Stir until chocolate is completely melted; cool slightly.
- Mix flour, coconut, baking soda and salt in medium bowl; set aside.
- Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy.
- Add egg and vanilla; mix well.
- Stir in melted chocolate.
- Gradually add flour mixture, beating well after each addition.
- Stir in remaining chocolate chunks and nuts.
- Drop by heaping tablespoonfuls onto ungreased cookie sheets.
- Bake at 375F for 11 to 13 minutes or until lightly browned.
- Cool on cookie sheets 1 minute.
- Remove to wire racks; cool completely.
