Sugar Free Cooke
- 2 cups white flour or 2 cups whole wheat flour
- 1 teaspoon stevia powder
- 3 tablespoons erythritol
- 1 teaspoon vanilla extract
- 34 cup butter (1 1/2 sticks)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs
- Preheat oven to 375.
- Combine flour, salt, and baking soda in a small bowl.
- Combine butter, stevia, erythritol, vanilla, and beat until smooth.
- Add eggs one at a time, while continuing to stir.
- Combine dry and wet ingredients and stir.
- You may add 1 cup and/or 1/2 cup of coconut, but know, doing this will increase sugar count.
- On a buttered pan, place as many possible 2 cubic inches of batter ( 2 inches between each other).
- Bake 9-11 minutes.
