Bowl of Oatmeal Muffins
- 1 12 cups all-purpose flour
- 34 cup large flake old fashioned oats
- 1 tablespoon baking powder
- 1 teaspoon salt
- 34 teaspoon ground cinnamon
- 1 cup packed brown sugar, divided
- 2 eggs
- 1 cup plain yogurt
- 23 cup milk
- 12 cup vegetable oil
- 23 cup raisins
- Preheat oven to 400; line 12-cup muffin pan with paper liners.
- In a large bowl, whisk together the flour, oats, baking powder, salt, and cinnamon.
- In another bowl, whisk together 3/4 cup of brown sugar, eggs, yogurt, milk, and oil until well blended.
- Add the egg mixture to the flour mixture and stir until just blended; gently fold in raisins.
- Divide batter equally among prepared muffin cups; sprinkle with the remaining brown sugar.
- Bake in a preheated oven for 25-30 minutes or until tops are golden and a pick comes out clean.
- Let cool in pan on a wire rack for 3 minutes, then transfer to the rack to cool.
