New Potatoes With Lemon Horseradish
- 1/4 cup Land O Lakes Butter
- 1 tablespoon prepared horseradish
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 12 small (1 1/2 pounds) new red potatoes, unpeeled except for 1/2-inch strip around center of each potato
- 1 small lemon, cut into 6 (1/4-inch) slices, halved
- 2 tablespoons chopped fresh parsley
- Heat oven to 350F.
- Melt butter in oven in 2-quart casserole.
- Stir in horseradish, lemon juice, salt and pepper.
- Stir in potatoes until well coated with butter.
- Cover; bake 55-65 minutes or until potatoes are fork tender.
- Garnish with lemon slices and sprinkle with parsley.
