Tuna Pasta Salad
- 8 oz. small sized shell macaroni
- 1 Tbsp. olive oil
- 1/4 lb. green beans
- 1 (7 oz.) can water packed tuna
- 1 c. thinly sliced zucchini
- 1/2 c. shredded carrot
- 1/2 c. olive oil
- 2 Tbsp. wine vinegar
- 1/2 tsp. salt
- dash of pepper
- 1/4 tsp. oregano
- 1/4 tsp. basil
- 2 Tbsp. chopped fresh parsley
- Cook macaroni according to package directions.
- Drain.
- Toss with 1 tablespoon olive oil and cool.
- Clean green beans and cut into 1-inch pieces.
- Steam for 5 minutes; drain and cool.
- Drain and flake tuna.
- Place macaroni, green beans, raw zucchini, carrots and tuna in medium bowl.
- In a small bowl, place olive oil, vinegar, salt,
- pepper, oregano and basil.
- Stir with a whisk.
- Pour over ingredients in bowl and toss lightly.
- Sprinkle with parsley.
- Makes 8 servings.
