Almond Cookies

  1. Preheat oven to 350F Line baking sheets with parchment paper.
  2. Combine shortening and sugar in a large bowl.
  3. Beat at medium speed with electric mixer until light and fluffy, about 5 minutes.
  4. Beat in egg and almond extract until well blended.
  5. Combine flour, baking powder, and salt in a medium bowl.
  6. Add to shortening mixture; blend well.
  7. Wrap dough in plastic wrap, refrigerate for 2 hours.
  8. Roll rounded tablespoons of dough into balls.
  9. Place on prepared baking sheets about 2-inches apart.
  10. Flatten slightly with fingertips.
  11. Gently press almond into center of each.
  12. Bake 12-15 minutes or until cookies are just done but not brown.
  13. Cool on cookie sheet 4 minutes, transfer to cooling rack.
