Apple Allspice Muffins Recipe
- 1/4 c. +2 tb reduced calorie margarine, divided Brown sugar substitute to =
- 3/4 c. Brown sugar, divided
- 1 x Egg
- 1 3/4 c. All-purpose flour, divided
- 2 tsp Baking pwdr
- 1/2 tsp Grnd allspice
- 1/4 tsp Salt
- 3/4 c. Skim lowfat milk
- 1 c. Peeled, finely minced apple Vegetable cooking spray
- 1/2 tsp Grnd allspice
- Cream 1/4 c. margarine in a medium bowl; gradually add in 1/2 c. brown sugar substitute, beating at medium speed of an electric mixer till mix is light and fluffy.
- Add in egg, and mix well.
- Combine 1 1/2 c. flour, baking pwdr, 1/2 tsp.
- grnd allspice, and salt.
- Add in to creamed mix alternately with skim lowfat milk, stirring just till moistened.
- Stir in finely minced apple.
- Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
- Combine remaining 1/4 c. brown sugar substitute, 1/4 c. flour, and 1/2 tsp.
- allspice in a small bowl.
- Cut in remaining 2 Tbsp.
- margarine with a pastry blender till mix resembles coarse meal; sprinkle proportionately over tops of muffins.
- Bake at 400 F. for 20 min or possibly till lightly browned.
- Makes 1 dozen muffins.
