Buffalo Wing Onion Rings

  1. In a casserole dish, combine onions, buttermilk and Buffalo sauce.
  2. Allow to soak for about 2 hours.
  3. Place corn flakes in a food processor and pulse until they are fine crumbs.
  4. Mix corn flakes, bread crumbs and ranch seasoning in a medium-sized bowl.
  5. In another bowl, mix egg whites and Tabasco hot sauce.
  6. Put the wheat flour in a separate bowl.
  7. Take each onion and dip in the flour, followed by dipping the same onion in the egg whites and then finally in the bread crumb mixture.
  8. Place onion rings on a baking sheet fitted with a baking rack (I actually use a cooling rack) so the onions cook evenly.
  9. Once all the onions are dipped, spray lightly with cooking spray.
  10. Bake at 450 degrees F for 10-15 minutes, flipping onions halfway through cooking.
  11. Serve warm with ranch dressing.
