Old-Fashioned Tapioca Pudding
- 2 tablespoons butter
- 12 cup tapioca, 1/8 inch wide
- 4 cups milk
- 14 cup sugar
- 1 cinnamon stick
- 1 lemon, zest of, freshly grated
- Melt butter in a saucepan and add tapioca pearls.
- Cook for 2 minutes.
- Add milk, sugar and cinnamon stick.
- Simmer, stirring occasionally, until the tapioca is translucent and soft, 30 to 40 minutes.
- Stir in lemon zest.
- Serve warm or cold.
