Old-Fashioned Tapioca Pudding

  1. Melt butter in a saucepan and add tapioca pearls.
  2. Cook for 2 minutes.
  3. Add milk, sugar and cinnamon stick.
  4. Simmer, stirring occasionally, until the tapioca is translucent and soft, 30 to 40 minutes.
  5. Stir in lemon zest.
  6. Serve warm or cold.
