Jaffa Cheesecake Slice
- 1 1/2 c. all purpose flour
- 1/4 c. cocoa powder
- 1/2 c. confectioner sugar
- 160 grams (5 oz.) butter
- 1/2 lb. cream cheese softened and chopped
- 3 Tbsp. orange rind grated
- 1/2 c. sour cream
- 3 eggs slightly beaten
- 1/3 c. confectioners sugar
- 4 oz. white chocolate grated
- grated chocolate and glace orange wedges
- Preheat oven to moderate 325 to 350u0b0.
- Brush a 9 inch square cake tin with oil or melted butter.
- Line base with baking paper, extending over 2 sides.
- Place flour, cocoa and confectioners sugar in a food processor; add butter using pulse action, process for 45 seconds until mixture comes together.
- Press into prepared tin, smoothing surface with the back of a spoon.
- Bake for 15 minutes; cool completely.
- Reduce oven to moderately slow 325u0b0.
- To make topping, combine cream cheese, rind and sour cream in a large mixing bowl.
- Using electric beaters, beat until mixture is smooth and creamy.
- Beat in eggs, sugar and chocolate.
- Pour topping over base.
- Bake for about one hour or until set; cool completely in tin.
- Serve, cut into squares, decorated with grated chocolate and glace orange.
