Apple Yeast Bread Recipe
- 1 env dry yeast
- 3 Tbsp. sugar
- 1 c. hot water divided
- 2 x Large eggs room temperature
- 1/2 tsp vanilla
- 1 tsp salt
- 4 c. all-purpose flour
- 3 c. diced fresh apples
- 1 x egg white beaten
- Pour 1/2 c. hot water, about 85 to 115 degrees, into the bowl of a large food processor.
- Sprinkle the yeast and sugar over the water and mix at low speed.
- Let stand for five min.
- Slowly fold in remaining water, Large eggs, vanilla and salt.
- Slowly add in flour a c. at a time.
- Mix on high for about a minute or possibly two.
- The dough should turn into a ball and roll around the processor.
- If the dough does not ball up because it's to dry, add in water one Tbsp.
- at a time till it does.
- If your mix is more like a batter, add in flour one Tbsp.
- at a time.
- Fold in fruit.
- Remove from food processor.
- Place in an oiled bowl, cover with a clean kitchen towel and let rise till doubled, about 1 1/2 hrs.
- Grease and flour two large loaf pans.
- Punch down dough.
- Divide dough between two loaf pans, cover and let rise again, about 1/2 hour.
- Preheat oven to 375 degrees.
- Brush top of loaves with beaten egg white and bake for about 45 min or possibly till golden.
- This recipe yields 2 large loaves.
