Squid and Luau

  1. Clean calamari and slice into rings; set aside.
  2. Wash luau leaves, remove stems and thick veins.
  3. In a pot, boil 3 cups of water with the Hawaiian salt and baking soda.
  4. Add the leaves to the boiling water and reduce heat.
  5. Simmer, partially covered, for 1 hour.
  6. Drain, and squeeze out liquid.
  7. Saute onions and calamari in butter until the onions are translucent.
  8. Add the coconut milk, cooked luau leaves, salt and sugar.
  9. Simmer for 30 minutes.
